Which CPU should I get? I am thinking of a 16-core Threadripper  (1950X probably), or should I look into Ryzen? Pretty sure the extra cores are going to help, and I know that the 12-core TR against the new 12-core Ryzen have very similar results... But I am looking for the best performance for a workstation (like for video editing primarily in Hitfilm).

I don't know what your budget is, but the 3rd Gen Threadripper and Ryzen 9 3950x are coming out soon. The 3950x is in September, while Threadripper is unannounced but most of us are expecting that in October. I'd wait a little to see if Lisa Su has anything to announce in the next month or two on Threadripper.

If you don't have the money for that, then the 3900x is a better choice over the 1950x. The 1950x probably holds a small lead in multithreaded, but it's nothing to write home about and in the single threaded stuff, the 3900x destroys the 1950x. I'd go for 3900x if I were you because it's more well-rounded.

As others said we need more info like the budget. PCI-E 4.0 might also be worth it for you sense you do video editing i would look into that keep in mind its not all about the CPU!

Also get either a threadripper 3000 series chip that's coming out eventually or go with Ryzen 3000 i would try and avoid older models as you get double the bandwidth for AVX support and it really shows in some applications and might matter a lot to you if  you look deeper into the software you are using.
