Ryzen 3600 is 200$ ... it's better than 2700 even though it's less cores : https://www.amazon.com/AMD-Ryzen-3600-12-Thread-Processor/dp/B07STGGQ18/

Also, you could do better in the motherboard department for a few dollars more.

Can probably also get a deal for 3200 Mhz ram. It would help.  If the budget is really tight, delay buying the 2 TB drive and use that cash for your other hardware.

They're comparable to CX series, and your system won't go over 300w so even with a 500w psu, you'd be good.
