I'd need cheapest-but-working build for office work.

 

Triple 1080p monitor.

Must be able to play 1080p60 YouTube video.

Whilst recording the three monitors at very very low preset 10 FPS.

Whilst allowing me to work seamlessly on Unity project (which isn't massive).

GTX 1050 has 3 display outputs you can use, but you may need to use some adapters as they are DP, HDMI and DVI

 

Ryzen 1600 should be able to handle the recording of all 3 displays + unity

Cheapest is not a budget. Do you have an actual number in mind?

Some GPUs with 4 ports have been tested with three monitors at the same time and it turned out that in some of them, (although they have 4 ports) only 2 ports can be used simultaneously, which is incredibly confusing especially when you verify the specifications and it says it has 4 screen ports. So just so you know, verify that the GPU you purchase has been tested to work with three monitors at a time.
