Is there a way to set the fans to react to the temperature of more than one component?   Essentialy I want a case fan monitoring the cpu to ramp up rpm if the video card, mos, pch, any temp sensor… reachs say 70.

I have a gigabyte aorus ultra with an 8700k and a 2080 graphics card.

Speefan can, Maybe Argus Monitor too. But in reality this isn't something you should be doing. Or rather setup zones of cooling. Front fans using GPU temp, and rear/tip CPU for example. Sensors for other components are inaccurate, and those aren't your most important things to cool anyway.
