On a more serious note I've always wanted to go to Africa and work on some of the humanitarian projects they have going. Pretty cheap holiday with a chance to build some muscle and make a difference.

Because 4 years of service and 4 weeks are the same thing.

 

Also, you can't just join the Forces. You have to apply, and you have to be accepted. If they don't need anyone in the field you apply for, you don't get in.

Or I could just go help for 2 weeks of the year and still live where I want to live, doing a job I want to do that I can change or quit whenever I so desire.

Well it's still a good option. But of course the main reason to pick working with the Canadian Forces should probably be that first and foremost you like the working environment. If you don't (and I'm guessing you don't) then it's not the place for you.

 

Personally I am planning to hopefully serve with them as a mechanical engineering officer within 4-5 years.

I wouldn't mind the working environment but I'm not as young as I once was, and with the other things I'm currently invested in (owning one small business, starting a second as well as finishing a few certificates) it just doesn't make any sense at all.

That, and they're not hiring in any of the fields I'd be interested in serving under.

 

If you're going for a job and also getting an education out of it at the same time it's an excellent choice. My uncle did that to become a doctor. Served his 6 some odd years and went into private practice.
