So I am planning on making a huge investment into getting my dream PC. My budget is 2000 USD, but flexible. I don't want to spend too much more, but I can, and of course I would love to pay less.

My intention is 4k gaming on my TV, in-home streaming, VR, Live streaming for viewers on the internet.

What I'm looking for is less of parts recommendations (it's gonna be a few months) and more feature recommendations. The last time I built a PC, Pascal was a whisper on the wind, so it's been a while.

I know I want USB C thunderbolt 3 ports, and more USB 3+ C ports to run my Valve Index headset off one cable. But I am less familiar with NVMe or M.2 storage, or the advantages of DDR4 for gaming and VR.

A rundown on current build:

4690k with a 212 evo, 1070 mini (accidentally didn't get 1070ti and I just said screw it)16 gb DDR3, 750w PSU, 2 256 SSD, 1 TB HDD, and Asrock Z97M in a Bitfenix Prodigy.

I feel like the only thing I could possibly carry over is my PSU and storage lol. Also I am an intel/nvidia guy. But I am willing to move an AMD CPU but definitely getting an nvidia card

Thunderbolt is really only on Intel boards due to it being their IP currently, afaik.

So, you'll be gaming? Or streaming? What resolution/refresh rate?

NEWS:

AMD Zen 2 is right around the corner, in terms of CPUs. Navi GPUs are rumoured for later this year. Both of those are on 7nm, while Intel is stuck on 14nm still and NVIDIA just made a bigger Pascal with tensor cores for RTX.

NVENC has been getting better and better, with the new one on Turing GPUs you'll be set for streaming. That being said, x264 is still the king.

NVMe drives are nice if you'll be recording at 4K and will be working a with a lot of 4K footage. They're becoming more and more affordable by the day anyway, so I'd be getting one either way.

If you're doing x264, AMD cards are usually a bit better value... even though you said you'd like NVIDIA you should consider it. Since I've heard AU power is expensive, be sure to factor that in as well. Also on the x264 note, Ryzen is perfect for it.
