During any game my 1080ti will stop outputting to my display I am forced to restart and then come back to a windows notification saying the display driver has crashed.

DDU (and then reinstall)

Change from Game ready to creator drivers

Reinstall GPU

Change GPU to prefer maximum performance

Is the GPU overclocked or running a modded firmware? Was it bought used?

Hmm, and you already DDU'd it. Try making a new user profile on Windows and see if it still happens when running a game on the new user profile. If it doesn't happen on that profile it would be an issue with your Windows install.
