No bootable device happening suddenly or randomly is usually a sign of a failing boot drive. You haven't provided any specifications or model numbers for the laptop so it's really hard for us to help you here. What kind of drive is inside the laptop, and when you say it "seems fine" what did you do to test the drive?

Thanks, so it's a traditional spinning rust disk. Firstly, I'd recommend replacing it with an SSD should you need to replace it. Secondly, you'll want to test it by taking it out of the laptop and connecting it to a regular desktop PC, then use WD Data Lifeguard Diagnostics or a similar tool to check SMART diagnostics. https://support.wdc.com/knowledgebase/answer.aspx?h=p2&ID=940&lang=en&p=110
