The Menu of Assasin's Creed Origins tells you what is for what and wich setting impact CPU and wich GPU.

PS: 12GiB DDR4??? :|

If that is the case then you aren't running dual channel memory, which is likely where your performance problems are coming from. I would try getting another 8 gig stick to pair with your existing 8 gig stick and run them in dual channel. Contrary to what was popular opinion a few years ago, ram speed and timings and dual channel really do contribute a lot to cpu performance, especially in games that are taxing on the cpu like the new Assassin's Creed games.

Main PC :

CPU = R9 3900X / Motherboard = Asus Crosshair 8 Hero / GPU = EVGA SC Ultra RTX 2060 / RAM = G.Skill 3600 16-19-19-39 ( 32GB / 4x8 ) / Cooling = Dark Rock Pro 4 / Storage = Western Digital Caviar Blue ( X4 ) Crucial 500GB NVME, 500GB 970 EVO/ PSU = Seasonic X-850 Modular / Case = Corsair Carbide 200R

Wireless = Asus PCE-AC56 / Keyboard & Mouse = Corsair K70 MX Blue, Logitech G203 / Headphones = Hyperx Cloud Alpha /

It seems this issue is more specific with AC games.

I did a search and AC games are very memory bandwidth hungry.

It's probably something to do with the bullshit DRM though
