You can also leave it untouch so if anything happened to the SSD you can just boot to that drive.

yep   

the only thing i would do first, is unplug the old drive before starting the computer at least once, to make SURE you are booting off the ssd. then plug it in and wipe it

That's not the proper way to do it.

You just have to select the new drive as the 1st boot drive in bios.

After it booted, open up disk management, right click on the disk drive (not partition) which have C partition, click properties and you'll see the name of the SSD drive.

its not that it isnt the "proper way" of doing it.  its just usually done the other way.

there is nothing wrong with plugging it in while the computer is on.  hotswap is a thing for a reason.

 

i just personally like to be sure im on the right one by making sure nothing else is plugged in.

Hot swapping must have the sata controller in AHCI mode.

Not all motherboard defaulted in AHCI, not recommended practice to just hotswapping. 

You may loose your data.

what happens with two devices with an operating system installed is that sometimes, when you perform the installation of Windows in the second one, the installation does not succeed properly, the boot record remains in the first device which means that during the process of installation in the new hard drive, the boot record is not created in the second unit, that happens mainly because there is already one and Windows does not consider it necessary to create a second boot record. The system will work all the time, except when you remove the first unit, it becomes unbootable, or when something happens to the first unit, the second device will not start and that leads to other problems. That is why when I found a situation where I have 2 units and one has an operating system already installed, I remove that unit during the installation and then plug it back in once I have reset the priorities of the boot options.
