Shall I keep the intel i5 8600k for performance or the amd ryzen 5 2600 to save money? I would mainly be playing 1080p gamming on a 144hz monitor. Saving money would be good for me and my pc to preform really good in triple a games.

To a point. If you want to game at a very high fps (like 144) you need a very fast CPU to go with the good GPU. At lower fps (like 60) the GPU is much more important than the CPU.

this one I would suggest. 9600k is free performence, that mobo can even hold a 9900k, ram is cheaper, mx500 is equivelent and much cheaper (crucial=micron), 2070 because I had money left, mb511 for better airflow and more included fans, and the pure power 11 because it's in some ways better and is cheaper. for the cooler I would suggest a arctic freezer 34 esports duo, but that one isn't listed on pcpp yet.

Can you try and find another case that looks similar to the nzxt h500, or one that has nice or decent rgb lights. is the i5-9700k better than the 8600k?? So for gaming I would get a lot more fps.

what's wrong with the mb511 rgb? the 9700k is better, but I would rather invest in a stronger gpu over the cpu here

The case design doesnt really look nice to me, thats why I went with the h500 first as I prefer simply and nice looking cases.
