How much screen tearing will 80fps on a 75hz monitor cause?

You can't really tell, but from my experience with around 65fps on a 60hz monitor it isn't that bad. But I can't magically say though.

well tearing happens when there is a difference between what you monitor is showing and what your gpu is outputting.

if you are always over 80 or on 75 then there should be little or none.

you can limit the frames you gpu outputs so this will be a non issue.

though tearing with out a so say 'sync' monitor  will always happen

I would just limit my FPS to 75 unless you're playing a game where the FPS matter like CSGO. CSGO I leave uncapped but all other games (like COD, Hitman 2, GTA V) I cap at my monitors 60hz refresh rate.

80 to 75..... almost nothing.

Use V-sync

I always use V-sync no matter what...
