Why does this bad boy only have Display Port and HDMI Mini ports? Which should I use?

Use the display port if your monitor supports it. 

It it doesn't just use the good old HDMI port

It has one DisplayPort and three Mini-HDMI ports. I'd say use the DisplayPort.

I haven't seen a completely white card in ages, wow

That is one sexy card, it should match perfectly with a NZXT Phantom 410

Display Port all the way if you monitor supports it, otherwise, well, it's not like you have a lot of choice huh... And why HDMI mini jeez.
