Should I go Asus Crosshair VII with a 2600X or Asus Maximus Hero XI with a i5-9600k? GPU is GTX 1080. Using for gaming.

9600k 6c, you will have un-noticeable higher fps but you will see significant fps drops in demanding games and you will be stuck on that mobo chipset

 

r5 2600x 6c12t, smoother gaming experience better cooling. upgradeable till 2020

 

too obvious to go for amd

Yes wait for ces 2019 for amd to announce ryzen 3000 series, you might see a decrease in price for the 2000 series if you are not urgently wanting to build a computer now.
