Should I go Asus Crosshair VII with a 2600X or Asus Maximus Hero XI with a i5-9600k? GPU is GTX 1080. Using for gaming.

If you plan on doing anything else that's CPU intensive besides gaming, then go AMD. If you plan on strictly gaming, I would go with Intel.

Case: Fractal Define R6 USB-C Tempered Glass CPU: Ryzen 9 5950X @ 3.4GHz Motherboard: ASUS X570 ROG Crosshair VIII Hero RAM: 64GB DDR4 4000MHz G.Skill GPU: EVGA RTX 3080 FTW3 Ultra PSU: Corsair HX1000i 80+ Platinum Drives: 500GB SSD (2x), 1TB SSD, 960GB SSD, 120GB SSD, 2TB (2x) HDD, 4TB HDD, & 500GB HDD Displays: Acer Predator 27" XB271HU 165Hz G-Sync (1440p) & 2x Dell P2715Q 27" (2160p)

The 2600X smashes the 9600K left and right for stuff that isn't gaming due to its 12 threads. Also, the framerate difference while gaming is negligible.

I have no idea what I'm doing and no one can stop me.

9600k 6c, you will have un-noticeable higher fps but you will see significant fps drops in demanding games and you will be stuck on that mobo chipset

r5 2600x 6c12t, smoother gaming experience better cooling. upgradeable till 2020

too obvious to go for amd

Yes wait for ces 2019 for amd to announce ryzen 3000 series, you might see a decrease in price for the 2000 series if you are not urgently wanting to build a computer now.
