RAID?

I've got 2x240gb of M.2 NVME drives, should I run them in RAID? If so, what kind of RAID should I run them in (RAID 0, RAID 1 etc. etc.)? System specs below, thanks!

It all depends on your needs. For most users, RAID is not needed. Please provide some details about what you'll be using the system for and why you think you need RAID.

It's a pretty general use system. Lots of excel work, word processing and gaming. As for backing up I've only filled one drive with games, it's a new build so I'm not concerned with that. For the long term most would end up in the cloud or on a mass storage SSHD for misc. files. Was simply wondering whether or not I should RAID.

Based on what you've told us I'd say it's not needed. I don't see any real benefit for you striping or mirroring the drives.
