Which one should i get?

A GTX 1060 3GB or GTX 1060 6GB? 

Is there going to be any difference in performance?

Is 6GB of VRAM really needed?

Depends on the price. 1060 6GB is roughly 10% faster, the difference will be even more noticeable on games with heavy textures

Usually the RX 580 will outperform the GTX 1060 by a small margin.

 

About the VRAM size, if you'll play at 1920x1080p you can pick the 4gb variant instead of the 8gb, if that's cheaper.

the 4 and 8 are both about equivelent to the 6gb 1060. I would recommend getting the 8 if the price difference is small.
