Would like to know what config is required to to play E-sports and other games.

My plan is to build a gaming café.

Triple A games for a cafe? Now that's something and it will cost you something as well. As far as e-sports are concerned, you get like a 3200g or any ryzen apu for that matter (or a previous gen R5 *600 sku) and like a 1050ti or 1650 and you can game on.
