If you're going more than 29" might as well get the 1440p. I think 29" 1080p is sweet spot and so is 1440p for 34".

At one point, I've even seen a non-techie swoon to buy a prebuilt cause of the free 'good' AV on the bundle. I chuckled at the sales rep and told the costumer to buy something else.

High end motherboards doesn't make a difference unless you use them for LN2 cooling or extreme overclocking. Get the motherboard with the most features you'll be using without breaking the bank instead.
I would go for the self build route. The journey is worth it. Take note, if you're going for the self build, make sure you keep receipts of all parts that are bought since you'll gonna need those for RMA warranty and or refunds.
No iPhones. I hated those suckers, less performance and customization and equal if not more expensive than what my current phones worth. Probably switch to LG G4, Galaxy S6 or wait for the newer ones and then snag the S7.
