so should i use an amd board or intel board if i am going for 2 way sli?

Afaik BOINC/F@H doesn't care if the GPUs are in Xfire/SLI, so long as they exists in the system they'd work.

ok so does it utilize the full 16x or can i put a 16x gpu in 8x or even 1x

(Can't remember where I heard this from) Some projects actually benefit from a higher bandwidth so try get both GPUs in x16 slots running in x16/x8

im just wondering if i have a spare 8x slot should i fill it with an extra gpu?

Yes. If you do, though, put the Nvidia card on the slot with the higher bandwidth (aka the top one) and the AMD card on the lower one.
