Windows has drivers in the OS by default, that's why you'll actually get display output when you first boot up even though nvidia drivers aren't installed yet. The drivers really suck performance wise, but at least they work.
You definitely need to uninstall them or you might get issues. Updating the drivers won't fix it because those are 1070 drivers and won't work on a 1080 ti
