I have had mixed opinions on what one to get but i thought i should ask over here since you guys deal with all this stuff, this will be my first built pc, I can either get the Intel build with an i5-8600k and a 1080 or the AMD build with a 7 1700 and a 1080ti.

If I were you, I'd go Ryzen 7 and then overclock. I absolutely would not pair that board with that CPU if you plan to overclock though. It's pretty low end, and I don't think you'll get amazing overclocks. If you absolutely can't squeeze out another penny on that build for a better motherboard, then the Intel one probably is the better option.

The 1080ti is significantly more powerful than the 1080, i'd go AMD on this one.

but the base clock on the intel one is higher...but the amd one has 8 cores, i learned how to calculate all that last year now i have forgotten it...great

The 1080 Ti is a better card than the 1080, and for gaming that's the direction you'd want to go in. That's just a really, really bad motherboard for a Ryzen 7. Even for Ryzen 5, it's iffy. PC MATE is about the lowest end MSI makes, and MSI's gen 1 Ryzen boards were kind of crap anyway, so...

If you go the AMD route, consider an X370 board, something like the ASUS Strix, AsRock Fatal1ty or AsRock Taichi (my personal favorite). You're going to pay more, but you're going to get a better, more stable overclock out of your R7, and your VRMs won't explode in two years. You can cut some costs by making those NZXT RGB fans go away and using generic Asiahorse or Aigo RGB fans instead. It won't make up the difference, but you have got to get a better board if you go Ryzen 7.

I enjoy buying junk and sinking more money than it's worth into it to make it less junk.

I'd go with the 8600k and the 1080Ti, and stop wasting so much money on RGB fans.

Somewhat. I'd still look for x470 or x370 though. You should really swap the SSD for a SATA one, the difference between m.2 and SATA for gaming is nearly imperceivable.

whats the difference between them?

Between SATA and M.2? M.2 NVMe(which is what you have in the list) is extremely fast. It's great for things like servers, because many people will be hitting it with extremely hard work loads at one time, so it won't fall behind, like SATA might. For a desktop situation, NVMe is so fast that your other components often bottleneck it. That's why I recommend regular SATA unless you're going for budget-less PC, simply because the speed difference will be somewhat lost on you.

EDIT: I feel like I've been unfair to NVMe. Don't get me wrong, you will see a difference, it'll just be so small that it isn't worth the extra boatload of money that NVMe drives cost over SATA.

I  would go for the new AMD build, but swap out the 970 EVO for an 860, and then try to bump up the motherboard to and x370 or x470, if you can.

I was thinking more the 500GB, but if you can fit the 1TB and a better motherboard in your budget then go for it. If you really truly don't care about overclocking, you could just go for the 1TB even if you don't have enough for a higher end motherboard.

Yeah for sure, I get that. Did the same thing just a couple months ago. Had literally the lowest end Intel HD from 2010, and now I've got a 2400G, and about to get an RX 580.

I'd recommend this part list. Will give you a great experience, supports SLI, and has RGB, if you're into that sort of thing.

If you mean the colours of the lights, then yes. You could have a black board with white or blue lights, and it's all controlled through software.
