Minimum Disk Speed For Lightroom & PS Editing

I'm tinkering with freeNAS and got an idea to build a server for photo editing. It wont be large maybe few 250gb or 320gb hdds(I'm just starting with freeNAS so starting small) since I dont have large library. how much speed will make an acceptable editing experience.

 

Any suggestions, tips are welcome.
