The last console I had was an XBOX 360 and they had these headsets.  I Really liked using them but don't really see any equivalent on the market today for PC's.  I've got all the current options already(wired and wireless headsets, speakers, mic on a boom, Lapel Mic) but Don't find them as convenient as this thing use to be.

It doesn't have to be exactly like that but something that is:

1. Wireless

2. Open back / over ear

3. single sided

4. Volume controls

Also How would I set something like this up on PC so it behaved like it did on the xbox.  Basically how would I configure it to only have a voice program(ex. Discord/vent/teamspeak,skype) come through the earpiece but the game/program sound come though the conventional speakers?

a bluetooth headset should do the same job, its what that xbox 360 headset was.

you'll need a bluetooth receiver like this:

https://www.amazon.com/Bluetooth-Receiver-Transfer-Wireless-Keyboard/dp/B0775YF36R

then find a bluetooth headset you like:

https://www.amazon.com/s/ref=a9_asi_1?rh=i%3Aelectronics%2Ck%3Abluetooth+headset&keywords=bluetooth+headset

when connected it should show up as an output device and i believe discord and skype let you select the output device.

Oh boy aint this a blast from the past.

I don't know about a PC equivalent, but making voice come through your headset and games through speakers isn't much of a challenge.

In DIscord you can choose which audio device you want to use, independent on what you have set up in Windows.

Basically choose which input and out you want to use there and keep the original setting for speaker in Windows to have seperate sound.

Aside from that.. Choosing a specific wireless headset would be up to you or some guru that knows everything about it.

I'm afriad I have no clue.
