Problem when installing Windows 10

When I'm in the part where you have to select where you want to install Windows 10, I click on "New" on the disk where I want to install the operating system to create the Primary and System partition because if not the part reserved for the system is saved on another disk. The problem is that when I click on "New" I only create the Primary partition and not the System partition. I do not know if there may be something wrong configured in the BIOS.

I can't because the part reserved for the OS is saved on the Intel Optane module which is integrated in the motherboard

What do you mean intergrated? Just unplug the m.2 drive or disable it in the bios.

I have not seen the option to disable a m.2 drive in gigabyte's bios
