What type of Founders Edition Card do I get from NVIDIA?

You need to enter "NVIDIA GTX 1080 Founders Edition" ;)

So I've been searching for a RGB water block I can mount onto a GTX 1080 from the Nvidia-Store in the Founders Edition. When looking at the EK Waterblocks Webpage and accessing their custom loop configurator, I had to enter my graphics card model. But when I enter "GTX 1080 Founders Edition", it shows me like 20 different founders editions from various manufacturers. Which edition am I using when buying from the official Nvidia store?

They're all exactly the same. The packaging and the warranty are the difference. Custom coolers are a whole different story
