Corsair and EVGA have been my PSU brands of choice.  In that Wattage all the models they make are quality items with good warranties.

For me as well. I never use and never recommend any other brands.

This may seem like a dumb question so sorry in advance but how can you tell how many GPU's a PSU will support?

I may be wrong on this, but i'm guessing any 1000W PSU worth it's salt will have enough spots for 2 gpus. Now if you're doing a 10 GPU mining rig, probably need to do some more research, but with just 2, you should be fine

Depending on the manufacturer, one 1080 Ti needs either one 8 pin and one 6 pin power connector or two 8 pin power connectors.

Therefore two 1080 Tis needs either two 8 pin and two 6 pin power connectors or four 8 pin power connectors.

 

Next, check the power consumtion of your card. A FE 1080 Ti at idle draws 13 W, but this can increase rapidly with more demanding tasks: https://www.tomshardware.com/reviews/nvidia-geforce-gtx-1080-ti,4972-6.html

 

So, verify the amount of connectors available on your PSU and also the amount of current each rail of your PSU can provide. :)
