Samsung 970 evo raid array

Hey everyone, 

 

So for my upcoming build I have came in procession of 3 samsung 970 evo 250gb NMVe m.2 drives. Before you ask I got the for a steal that I couldn't pass up ad $80 USD each. My upcoming build is with the x399 zenith extreme and 1950x. I know the new update has the option for bootable m.2 raid so my question is what would you guys recommend boot from a standalone 250gb and raid the 500gb within the os or raid all 3 and boot off the 750gb? I have researched and realize having these drives in raid would have small increase of read/write speeds, just want second opinions, thanks
