I would say 1.4V is the limit. According to siliconlottery, about 85% of the 8600K can get to 5.0GHz

A lot of people tend to stay around 1.35V, though 1.4V is regarded as being a safe maximum. I personally wouldn't push much above 1.35V just because I feel the few extra hundred MHz that I might be able to get out of it just wouldn't be worth it for longevity's sake. Although this entirely depends on your cooling solution as well, if you can push 1.4V with decent temperatures ( 70C-80C Max ) then by all means do so.

It depends on temperature. 1.2V if your cooling sucks and it will get to 100C, 1.4V if you can keep it below 70C.
