You could get a laptop instead.  built in wifi, you don't have to buy storage or RAM, it comes with a mouse, keyboard and screen attached.

i second the laptop idea, travelling with a nuc or anything like that would be pointless, you can get better performance from a decent gaming laptop.

Probably just grab a Ryzen APU laptop if you find one for a decent price.

Otherwise grab any laptop with at least a quad core i5 and GTX 1050

Are you thinking for Lan parties or something?  Yeah otherwise laptop is your best bet
