I bought some RGB LED strips off Amazon for some back lighting so I could be one of the cool kids.  They're just the cheap shit. https://www.amazon.com/gp/product/B01I6AT920/ref=oh_aui_detailpage_o01_s00?ie=UTF8&psc=1

Anyhow, I realized when I plugged in one of the strips with a sodderless connector that the lighting was the wrong color.  The red and blue wire on the connector didn't match up to the strip.  So, this got me wondering... Can I link these together and alternate the wiring colors for multiple colors safely since these aren't individually addressable or am I likely to start a fire and burn down my apartment building?

I'm not quite sure what you mean by "link these together and alternate the wiring colors" but you totally can change the wiring on the connector or make an adaptor that connects the blue and red to their respective pins. I don't think there is a way for you to burn down your apartment building by just connecting the wrong wires for the LED strip

Cut the strips then basically run extension wires to another strip with alternating the wiring.  Like strip one would have red to red, blue to blue, green to green from the controller, and then it would change to like red to blue, blue to red, green to green, and then run the wires to the third strip in the chain green to blue, blue to red, red to blue, or something like that.  So that way all the strips would be different colors.
