So next year I'll be a student in engineering the school ask a laptop and some specified hardware and software.

The laptop need an i5 and 8go of RAM with windows 10. A kensington cable (I don't what this is).

My mom went to a local store and said it was at least 1200€ for those specs.

She said I need to look for one that is not the minimum and not the maximum, so my question is what laptop do you guys recommend me as a mid-range price with in mind that 1200€ is the minimum ?

Kensington refers to the lock you often see on laptops and such so that you can chain them to a table or wall, for example. For that price, take a look at the Dell XPS lineup maybe. I have the 2016 XPS 13 and I like it a lot. It's more of an ultrabook-ish though, so if  you're going to throw heavy workloads at it maybe Thinkpads or the likes are more the direction you need to think of.

Also, knowing what the "specified software" is allows us to give better advice as well.

amazon, ldlc.com, topachat.com, materiel.net

I bought the components of my current desktop PC on ldlc, bought a shield k1 on TopAchat, have an Amazon Prime.

I know that I can find laptop arround 900€ for the specs, I just want a laptop that will work perfectly fine for at least 5 years. The 1200€ minimum is what my mother think is the minimum and I want to take advantage of that to get more like a "high-end" laptop than a middle one.

The problem is that I don't know what laptop is the best for that range of price and also not every laptop listed is from 2016-2018 and I want a pretty recent one that may be better for the same price.

You can definitely find a decent laptop with decent specs under €900, however if you want something that can last long, I'll suggest business laptops.

Lenovo Thinkpad (customizable): T480 with optional 24+72Wh battery (I recommend this), X380 Yoga, X280, L380 Yoga, L380/480/580

Dell Latitude (customizable): 5290, 5490, 5590

Also, do you have any special requirements like max weight, display size, dGPU etc?

At least a 15" display and gtx 1060

The laptop will need to compile some

codeand games

Oh okay. Is portability important? I'll send you recommendations again later.

I can't guarantee that a gaming laptop can last long. You may also consider mobile workstation like Lenovo Thinkpad P, Dell Precision 5000/7000 and HP Zbook since they usually have the best longevity, however they can be expensive.
