wild overclocking voltage

I was just curious about a few things about the guys who overclock cpus to ridiculous clocks with exotic cooling (liquid nitrogen, phase change, etc.). Do they have to set the cpu voltage ridiculously high? Or do they get really well binned CPUs? or do they set the voltage to auto and just set high clock speeds?
