If you have no particular need to do so atm then I would hold off.  RAM and GPU prices are absurd rn and just having a spare CPU wouldn't be reason enough for me to build a new PC.  

 

Then again, building PCs is fun, so go for it, just try to buy used and make your own Scrapyard Wars-esq machine

The way you've worded the post, it sounds like you already have a gaming PC. If so, what are you going to do with another gaming PC? If you want one in another room or one for guests to use, then it could be worth it. If you're just going to have two gaming PCs in the same room just for your use, I can't see much point in building another gaming PC. 

 

EDIT: It's worth noting that right now is a pretty bad time to be building a gaming PC due to high GPU prices. I'd personally put it in a NAS system because I'd get more out of it compared to another gaming PC.
