I was thinking of upgrading from my i7 6700 (non k) to the 8700k but would it be a better to hold off for a couple of months to see if intel's 9700k will be a 8c/16t cpu to upgrade to? I do music production, photoshop, some video editing and sometimes some games here and there but mostly do that on my PS4 pro.

A 6700 non K is still a fairly competent CPU for many tasks. If you NEED to upgrade to be able to do your work then sure upgrade but if not then I'd hold off. Otherwise go for a 8700K

Judge a product on its own merits AND the company that made it.

Early rumors aren't showing that it will be 8c/16t. 

 

I also agree with Aluminium, you don't really need to upgrade. If you need 8 cores, I suggest looking at Ryzen 2 when it drops in March or going X299.
