Building New Gaming Station

So I am going to be building a flight simulation setup soon, and I am stuck on a couple of things.

 

Firstly, for my simulator I will be using TrackHat Clip Plud Headtracking Clip, so I can look around with head movements. Now with the monitors (Asus PG348Q) I have 3 options. Should I get 3, and have them all in a row? Or, I could get 3 and have 2 side by side with the third on top. Finally, I can just get 2 side by side. FYI No budget.

 

Secondly, since I will be having a large setup, I chose a large desk. This is the UpDesk Ultra Standard Height Adjustable Desk (large edition). The problem, is that I want to have my throttle quadrant in the right place, which is to my right and next to my hip, so I was looking at pedestals. But I am unsure of which to get, because firstly, I want a lengthy one, so I sticks out from under my desk and goes right by my side (because a single block sitting next to me would look awful) and secondly, I don’t need draws on it, it is just for placing things on top of, like my throttle quadrant.

So should I get 4 PG348Q ‘s (3 side by side and 1 on top) or 3 of them with a smaller monitor on top
