Over the ear headphones always make my ears sweat after a short amount of time so I've always used earbuds.

 

What are my options if I wanted to get some high quality over the ear headphones?

It depends on the design of the pads and headphones, most closed back headphones that have good seal are going to generate heat and sweat in your ears, try ones with more vented pads.
