Just wondering on your recommendations on wether to hold off to next gen GPU's or not. I don't struggle at all with what I currently play and I figured it would be best to hold off for now. What are your recommendations?

For right now, i just mainly play CS:GO and stream with some mining thrown in on downtime.

Do you need NVMe storage for something specific? If this is just a gaming rig, your money is better spent on the GPU when time comes, or upgrade the size of the 850 Evo.

And that memory is WAY overkill. consider dropping down (several) MHz brackets. maybe put the money saved into a higher quality PSU...

Could/Would I justify a new GPU at this point? a 970 isn't exactly a stellar performer for today's Triple-A games. But if you're satisfied with it's performance in CS:GO, i'd try to find a used 1080ti and be happy with it for several years. the 1080ti's performance isn't going to be obsolete any time soon.

[FS][US] Corsair H115i 280mm AIO-AMD $60+shipping

Ahh, i should of said that that pcpartpicker list isn't a planned build, it's my current build.

Your build is fine, the GPU should play most things without issues. I'd say hold off until you encounter something you're dying to play and can't play it reliably. Unless you got the cash burning a hole in your pocket and you wanna build something new. That card should continue to be fine for most if not all things on that 1080p display of yours for the foreseeable future.
