Why not go with the 8700K and a Z370 board?

This is going to be a gaming pc so we dont need 6 cores and the 7700k has a faster clock speed

Because it's faster than the 7700K in gaming.

A higher efficiency PSU would save you more money (in terms of electricity), and a higher capacity PSU would allow you to have more upgradability as well as being quieter (the fan might not need to turn on).

Firestrike has a physics test that pushes the cores and threads 100% though you have to realize that in any gaming situation this simply will not happen (unless you play lots of BeamNG.Drive that is).
