Dirt Bike Question

Just bought a Honda 125cc big wheel and I have never ridden a bike before.  One question; lets say I'm in fifth gear and I slow down to turn-down I need to shift down when slow down, or can I just accelerate when I'm done turning and not shift at all?  I have a Honda Rancher and I would just leave it in one gear the entire time.

You don't NEED to shift down, but if you don't your acceleration will be sluggish and slow, and if you're really slow in a really high gear you can stall.
