I've been looking at getting a new AIO, I would really like to get the Silent Loop 360 from Be Quiet! But the tubing looks awful. As far as I know Cablemod doesn't have any sleeves for this AIO but is there an alternative? Not looking for anything too fancy.

Sleeving Flex with Split will work, There many different versions from Velcro enabled ones to Non Velcro versions. It's basically the same thing Cablemod sells without the caps and less expensive.

any thoughts on a replacement for the caps? would think the ends on the sleeve would be a bit messy without some kind of cap

You just need to figure out a way to hold the sleeving down. There likely options out there, I never looked into it. If all else fails zip ties will always work.

Btw, Don't forget to melt the ends.
