first install 2016 as a gui based OS and not the stripped down version ;).
You can always change it to core mode later (unless you are using exchange)

also I am surprised that the OP didn't see that option when installing. I used hyper v a few times, but hate it compared to VMWare.

Hyper-V was designed to run VMs on the back. You'll notice that all the VMs insides are in sync with the host system. What I mean is, if they run, and you shutdown the computer, and turn it back on, the VMs inside Hyper-V will auto-start from a save state that it made when you shutdown the system.

VMWare Fusion/Workstation is more of a traditional VM like VirtualBox, where you start it as an application, start the VM, and all that. It doesn't auto-start.

 

My complaints on Hyper-V are:

  • The very poor Linux support, with no drag and drop, no copy/paste between host and client and the reverse, and some Linux distros have the cursor offset from the actual cursor, following different speed/acceleration making it impossible to have the cursor in sync to any level to reach edge to edge, and you just fight with it. Sure you just SSH to it, and that is the idea, but setting the OS is a pain with all these issues. And no display drivers for Linux based OSs either, not giving you any hardware acceleration on the graphics sides, and no ability to scale the window.
  • Uses non-standard VHD format.
  • Doesn't support anything else than VHD and VHDX.
  • I am not sure if the issue with Hyper-V or other VMs, but basically if Hyper-V is enabled, no other VMs can be running (they all don't work or have issues.) Hyper-V needs to be uninstalled.
  • No GPU acceleration for non-Server/Enterprise versions of Windows.
