So right now I have a i7 2600 non k @3.4 gz and I was wondering will it bottleneck my ststem with a gtx 1060 3gb oc 200 mg on core and 300 on memory 8gb of ram aswell.

You'll be fine, a GTX 1080 won't be held back in any significant way by a 2600. 

System specs:

4790k

GTX 1050

16GB DDR3

Samsung evo SSD

a few HDD's
