Probably should try using the hardware encoder on the graphics card so it doesn't put load on your CPU, and see if the performance/quality is good enough for you.

 

File -> Settings

 

Output -> Recording Section, set encoder to "Hardware (AMD)", quality to Indistinguishable or High (depending on how much file size matters to you).

Video -> Set the output resolution to 1920×1080, set FPS to 60 if you want (larger file size though)

Advanced -> Color Format: NV12; YUV color space: 709; YUV color range: Full
