Well it seems that the specs are pretty much same so i would go for the m.2 model, since m.2 is just so simple and easy

Depends. The green PCB would look awful if you've got a windowed case but if you haven't then you've got less cables to worry about that will marginally affect airflow negatively. Swings and roundabouts really. I'd say, if you've got a window, get the 2.5, otherwise get the m.2 IMO.

I have never seen a pc build where the m. 2 slot was visible in sight

You have now.

That's the only m.2 slot on the X99A Gaming 7.  The GTX1070 is in the top PCI-e slot.  If I were to put the card in slot 3, that would cover the SSD indeed.

I would go with the 2.5" drive because you can place it away from all the heat sources (video card)

Because the 850 series is SATA, I'd say the performance differences are negligable. However, heat will be an issue so it's probably better to go with a 2.5".

I forgot to mention that it will be in an ITX case, so if heat will be an issue in bigger case, that it defo will be for me. So 2.5 inch it is then.

But I do like the idea of reducing clutter and cables in the case...

Which one would you go for?

Either of them will do just fine. M.2 doesn't necessarily mean NVMe.
