You don't overclock just two or four or X number of cores. It's either all or nothing.

 

Also most programs you're likely to use are I/O bound. Trying to isolate them from what the game runs on will produce almost no performance benefit on an already high-end processor.

While thats possible, strings different clocks per core is to stabilize higher end OC and there difference between cores will be few MHz. Not worth your time vs what you are trying to achieve.
