I am looking at using the EK water cooling set A240
But was wondering what sort of design layout people would choose to have their PC set up with?

Designs - show me your designs, and also where you get the plexiglass from cheap enough to make doors with for the shelving unit...
One of your designs may well get picked so make it Good and Feasable - My Budget is not an issue. unless it's going to cost over £300
All listed parts are accounted for already, so only Extras in the design need to be costed up!
