How about the quality of your content will prevail. For people who say "I put out videos constantly on a regular basis everyday and only have 1k subs after a year". To them I say, "But is your content interesting?". If it is, it will get passed on and that is the best sort of "tag-view whoring" you'll get.

Pretty much this. I have a YouTube channel with a small subscriber following (~300), and I don't pump out videos very often at all. But the cool thing about having a small subscriber-base is that I get to interact with almost all of them somewhat personally.
