You will find a lot of courses that are beginner level and too easy. You say you are an apprenticeship means you will be getting various certs so the beginner stuff will be below you. Have a look at the cyber security certs. The company behind Kali Linux has a cert that is supposedly the cheapest respectable cert

The best place to start is the CCNA certificate stuff. You don't need to take the cert, but all the material aimed at making you pass the cert is really good and ensures that you get some essential knowledge about a wide variety of network stuff.

I'd say go and buy a Lynda.com subscription and start watching the lessons for CCNA and CompTIA N+ certifications. You'll probably want to end up getting the certifications later anyway, so it's a good time to start learning.
