My SSD keeps getting defragmented on windows 10, even though I have set automatic disk optimization to off. Is this normal? If not, do you have any suggestions?

Windows 10 can differentiate between a HDD and SSD and will optimize it as per the drive, where it will not actually run a defragmentation on the SSD but just trim and basically do garbage cleanup.

Is it actually getting defragmented (moving files around) or is it doing an optimisation (trim)? They're done by the same front end, and the trim function is a good thing although not necessarily needed as it should be done as it goes along anyway. I have read in the past MS might defrag SSDs, to get around filesystem fragmentation. Essentially beyond some point Windows can't cope with fragmentation of a single file so it will have to reduce it.

So is it okay to say 0 days since last run next to the SSD?

With windows 10 since it is able to determine what process to run on the drive, optimizing it isn't a problem or using say software that came with the drive. It's not bad to run trim or optimization on an SSD, I personally use a Samsung drive and let Samsung Magician take care of the rest and left the windows optimization off.
