So Intel and AMD currently offer 100$ cashback when buying a i7 7700k and a ROG Strix Z270H so i would end up at ~540€ with a 16GB 3200 Kit

Going for a Ryzen 5 6core setup with a  fatality x370 would be about the same price but offer me 2c and 4t more even if they might be abit weaker, btw whats the actual difference between the 1600x and the 1600 cant you just OC the 1600?

I tend to render every now and then and my gtx 1070 can push the frames what should i buy

you are stuck in the usual AMD or INTEL dilemma like many others these days.

Yes the ryzen CPU can be overclocked, but so can the Intel one. (decent cooling is a must to get high numbers though).

So as you mentioned yourself its basically 2 cores (4t) vs. higher clock speed. You have to decide if you need more cores or prefer higher speed. That question can only be answered by yourself.

You mentioned "rendering" now and then, that doesn't sound frequent enough to pick AMD over Intel.

And for the future-proofing aspect (if such a thing exists at all), by the time game engines will actually utilize more cores in a useful way, which would push you towards AMD, we will probably be another 2 generations down the CPU-line.

So this didn't help you at all, take your pick. (And to be honest, both are fine :-) )

7700k is only really necessary for 144hz, 1080p, otherwise R5 is still very good for gaming. And the 6 cores will help alot wither rendering.

Shouldn't really be an issue there, will also help with rendering as I have said.

If you render a lot, or want to, then go with ryzen.

1440p at 165Hz? sounds expensive? sure thats currect?
